A wine with natural yeasts that is produced using the most sugary grapes from the high reaches between the rows.
This wine, made according to the old method, which uses only natural yeasts, is further sweetened by selecting only the most sugary grapes from the high reaches between the rows.
It is bottled in accordance with weather conditions, and within weeks undergoes a process of spontaneous refermentation in the bottle – the ‘presa di spuma’ or sparkling effect. The result is a cloudy wine with light deposits of yeast at the bottom of the bottle, yet that is harmonious, dry in the mouth, and slightly fruity.
When tasting, slowly pour into a glass or directly into a pitcher, being careful to leave the sediment in the bottle.
